This exclusive evening will include commentary on each course alongside Champagne pairings curated by Sophie Kutten and The Doyle Collection’s own Group Sommelier, Philip Dunne. Dinner will be served on WILDE’s iconic terrace, with its unparalleled views of Grafton Street and 1930s-style décor, bathed in atmospheric candlelight for the occasion.
Charles Heidsieck is one of Champagne’s smallest Grand Marques and produces some of the region’s finest cuvées, which are celebrated worldwide for their elegance and complexity. The House was founded in 1851 by Charles-Camille Heidsieck, a gentleman-entrepreneur with a taste for adventure who reinvented the champagne market in the mid-19th century. The modern success of the Maison is attributable to the talented winemakers who have crafted Charles Heidsieck’s champagnes over the past three decades. Between them, they’ve been awarded ‘Sparkling Winemaker of the Year’ at the International Wine Challenge sixteen times. No other house has won the award more than twice.
This greatly anticipated event is an opportunity to experience five of Charles Heidsieck’s exceptional Champagne selections alongside a mouth-watering five-course tasting menu created by WILDE Executive Chef Sandeep Singh. Each individual course has been developed in collaboration with Philip Dunne to complement the specific cuvées presented on the night, while also celebrating the very best of Irish seasonal produce with a creative twist.
