This elegant evening will be hosted by Château La Coste Winemaker, Paul Guillouard, alongside The Doyle Collection’s Group Sommelier, Philip Dunne. Together, they will share insights into Château La Coste’s Irish origins, its organic and biodynamic philosophy, as well as the distinctive Provençal landscape that defines each impressive cuvée.
Dinner will be served on WILDE’s iconic terrace, where views of Grafton Street, 1930s-inspired décor, and atmospheric candlelight create an intimate setting for discovering these fresh, complex wines deeply rooted in nature. To complement each unique pour, Executive Chef Sandeep Singh presents a beautifully paced five‑course tasting menu highlighting delicate coastal flavours and refined seasonal notes.
